Onion Rings

"Batter" for Frying: --
1/3 cup cream
3 egg whites.
Just whisk it together until there are no lumps.

Onions, sliced into rings or strings
Flaxmeal, preferably golden flaxmeal

I usually use the Deb El powdered eggwhites instead of fresh eggwhites - Two tablespoons powdered eggwhites, plus one tablespoon water, then the 1/3 cup cream.

Slice the onions however you like then, coat with the batter. Put enough golden flaxmeal in a really big baggie to cover -- add the coated onions and shake up, then fry up as usual. I use peanut oil, personally

These can be added at the last minute in the same pan when you're cooking the Trout Almondine - that's what I usually do.
