Texas LowCarb Fried Okra

 

Fresh Okra
Flaxmeal (preferably the Golden kind)
Peanut Oil

Slice the okra into coins -- discard the tips and heads.

Put enough golden flaxmeal in a big plastic bag to cover the okra - put in the okra and shake. Fry in the hot oil. You can add a little bit of onion if you like. I like to cook it until it's almost burnt.

The okra itself is sticky, so I never use the batter, tho some good cooks do. Batter recipe is below.

"Batter" for Frying: --
1/3 cup cream
3 egg whites.
Just whisk it together until there are no lumps.

I usually use the Deb El powdered eggwhites instead of fresh eggwhites - Two tablespoons powdered eggwhites, plus one tablespoon water, then the 1/3 cup cream.
