Chicken Cordon Bleu
4 skinless boneless chicken breast
8 ham slices, thinly sliced
4 ounces crumbly bleu cheese
3/4 cup mayonnaise
3/4 cup parmesan cheese
Pound chicken breasts to about 1/3" thick with a mallet. Place ham on
breast then 1/2 oz
of bleu cheese. Roll up; securing with a little bit of the mayo/cheese mixture.
Spread the mayo/cheese mixture around the little bundles. Place in buttered baking dish. Bake at 350ºF
for 30 to
35 minutes or until browned and tender.
